Description

At the heart of a family heritage passed down for four generations, the “Le Jas des Oliviers” wine estate embodies a true passion for the terroir. From planting the vines to bottling their wines, each step is imbued with ancestral know-how and a deep respect for nature.

Without compromise or artifice, the cellar master skilfully directs the winemaking, thus preserving the authenticity of the terroir as the only course of action. In each sip, you find the very essence of the clay-limestone soil, nourished by a deep spring, which gives the estate's wines their unique character and exceptional quality.

The name "Jas" evokes the history of the region, where a sheepfold once established on the estate's land sheltered the flocks of sheep which grazed in the surrounding meadows. Today, these same lands are home to vines cultivated according to the principles of sustainable cultivation, guaranteeing a meticulously selected harvest, spread from the beginning of September to mid-October to harvest only the fully ripe berries.

For the production of rosés, particular attention is paid to the night harvest of the grape varieties, from 3 a.m. to 7 a.m., followed by immediate refrigeration to preserve their delicate paleness and subtle aromas. All these practices help to guarantee the quality, finesse and elegance which characterize the wines of the Le Jas des Oliviers estate.
